Sometimes you’re just craving something sweet but also wanting to be ‘healthy’.
Well, this 100-calorie (102 to be precise) chocolate mug cake is my go to evening snack when I’m feeling like that.
This recipe is so quick and easy to make, less than 2 minutes in fact, and deliciously tasty so is perfect to help satisfy those cake cravings!! This recipe is also vegan!
Cooking a Mug Cake
A mug cake cooks through a combination of microwave radiation and heat conduction. When you mix the ingredients for a mug cake in a microwave-safe mug and place it in the microwave, the microwave radiation penetrates the mug and interacts with the water molecules present in the ingredients. As the water molecules absorb the microwave radiation, they start to vibrate rapidly, generating heat.
This heat is then conducted throughout the mixture, causing the ingredients to cook. The baking powder or baking soda in the recipe helps the cake rise as it cooks. The cooking time for a mug cake is relatively short, typically around one to three minutes, depending on the recipe and the power of your microwave.
During the cooking process, steam may also be generated, contributing to the moistness of the cake. Once the cooking time is complete, the mug cake is allowed to cool briefly before being enjoyed directly from the mug or transferred to a plate for serving.
The convenience and speed of cooking in the microwave make mug cakes a popular choice for quick and easy single-serve desserts. However, it’s important to note that the texture of a mug cake may differ slightly from a traditionally baked cake, as the cooking method affects the final outcome.
With a mug cake it’s important to understand the heating capacity of your microwave as 5 seconds too long can cause your cake to turn into a rubbery solid mass. I find 45 seconds works well but if you’re not sure I would check on your cake every 10-15 seconds after the first 30.

Low calorie Vegan Chocolate Mug Cake
Guilt free treat with a mouthful of chocolatey heaven with only 100 calories!
- 2 1/2 tbsp Gluten free flour (or normal flour for non-gluten free option)
- 1 tbsp Granulated sweetener
- 2 tsp Cocoa powder
- 1 tsp Margarine (Dairy free if needed)
- 2 1/2 tbsp Water
- 1/4 tsp Vanilla
- Pinch tsp Salt
- 1/4 tsp Baking powder
Melt the margarine in a mug for roughly 20 seconds in the microwave.
Add the water to the melted margarine followed by the rest of the ingredients, mix well and microwave at 900W for 45 seconds. If longer is needed to cook the mug cake, microwave for 10 second intervals until cooked. So easy, enjoy…
