These fudgy brownies are so versatile and adaptable for dairy free and gluten free dietary requirements but it’s also great with an option for normal diets too.

Ingredients

  • 120g Gluten free flour (or normal flour for non gluten free option)
  • 100g Granulated sugar
  • 2 tbsp Cocoa powder
  • 100g Margarine
  • 2 eggs
  • 100g Dark chocolate
  • 100g White chocolate chips (or dairy free alternative)
  • 1/2 tsp Vanilla
  • Pinch of Salt
  • 1/2 tsp Xanthan gum (omit if for non gluten free option)

When it comes to baking, I have a handy money-saving trick up my sleeve: I never splurge on pricey chocolate chips. Instead, I opt for more affordable supermarket chocolate bars, which I skillfully chop into perfectly sized chocolate chips myself. Not only does this approach save me money, but I also find that the homemade chips boast a superior flavour. Plus, I enjoy the delightful variation in chip sizes, with some larger chunks adding an extra layer of decadence to my baked goods.

These brownies aren’t just your average treat—they’re a surefire way to please a crowd! Pair them with a scoop of velvety vanilla vegan ice cream and a drizzle of luscious strawberry sauce for an irresistible dessert that will leave everyone craving more. Trust me, it’s a truly yummy combination that hits all the right notes!

This recipe is my go-to easy crowd pleasing recipe, it has even become my grandma’s new favourite recipe for baking for her friends!

These brownies also freeze really well so they are great for making ahead of time. If you are going to freeze them though make sure you wrap them up in a double layer of cling film and tinfoil as soon as they have cooled and get them straight in the freezer, that way they stay the freshest.

I would always eat these within a month of freezing, and when you come to thaw them you can either let them come up to room temperature slowly or give them a quick zap in the microwave – that way they also come out nice and warm and gooie again… Yummy!

Chocolate Fudgy Brownies

Indulgent treat with a mouthful of chocolatey heaven filled with white chocolate chips and with a deliciously chewy centre.

Ingredients
  

  • 120 g Gluten free flour Or normal flour for non gluten free option
  • 100 g Granulated sugar
  • 2 tbsp Cocoa powder
  • 100 g Margarine
  • 2 eggs
  • 100 g Dark chocolate
  • 100 g White chocolate chips Or dairy free alternative
  • 1/2 tsp Vanilla
  • Pinch of Salt
  • 1/2 tsp Xanthan gum Omit if for non gluten free option

Instructions
 

  • Preheat the oven to 190°C or 180°C fan. Grease and line a 20cm square baking tin.
  • Melt the dark chocolate and margarine.
  • Whisk in the sugar, eggs and vanilla extract.
  • Weigh out the dry ingredients and mix together in a separate bowl.
  • Mix the dry ingredients and chocolate chips into the batter. Spoon into a 20cm square baking tin. Bake at 190°C/180°C fan for 30-35 minutes.
