These White Chocolate and Strawberry Blondies are so versatile and adaptable for dairy free and gluten free dietary requirements but it’s also great with an option for normal diets too.
White Chocolate and Strawberry Blondies

Ingredients
- 120g Gluten free flour (or normal flour for non GF option)
- 100g Soft light brown sugar
- 100g Margarine
- 2 eggs
- 100g White chocolate, melted (or dairy free alternative)
- 100g White chocolate chips (or dairy free alternative)
- Handful Strawberries
- 1/2 tsp Vanilla
- Pinch of Salt
- 1/2 tsp Xanthan gum (omit if for non gluten free option)

Chocolate chips
My money saving tip is that I never buy expensive chocolate chips for my baking! I always buy cheaper supermarket chocolate bars and chop them up into nice small chocolate chips myself. I also think they taste much better and I like how some of the chunks are bigger than others.
Dessert
These blondies make a crowd pleasing dessert as well as a tasty treat, pair them with some vanilla vegan ice cream and strawberry sauce to top them off! Yummy
Strawberries
You can either use fresh or freeze dried strawberries for this recipe, but I wouldn’t use frozen because of the water content, for the same reason, make sure you give them a dab with kitchen roll to remove any excess moisture once chopped up if you are using fresh strawberries.
These brownies also freeze really well so they are great for making ahead of time. If you are going to freeze them though make sure you wrap them up in a double layer of cling film and tinfoil as soon as they have cooled and get them straight in the freezer, that way they stay the freshest.
I would always eat these within a month of freezing, and when you come to thaw them you can either let them come up to room temperature slowly or give them a quick zap in the microwave – that way they also come out nice and warm and gooie again… Yummy!

White Chocolate and Strawberry Blondies
Indulgent treat with a mouthful of strawberry heaven filled with white chocolate chips and with a deliciously chewy centre.
- 120 g Gluten free flour (Or normal flour for non gluten free option)
- 100 g Soft light brown sugar
- 100 g Margarine
- 2 eggs
- 100 g White chocolate (Melted (or dairy free alternative))
- 100 g White chocolate chips (Or dairy free alternative))
- Handful Strawberries
- 1/2 tsp Vanilla
- Pinch of Salt
- 1/2 tsp Xanthan gum (omit if for non gluten free option)
Preheat the oven to 190°C or 180°C fan.
Melt the white chocolate (save the chocolate chips for later) and margarine.
Whisk in the sugar, eggs and vanilla extract.
Weigh out the dry ingredients and mix together.
Chop the strawberries up small (and not too many as the blondies will go soggy).
Mix the dry ingredients, chocolate chips and strawberries into the batter. Spoon into a 20cm square baking tin. Bake at 190°C/180°C fan for 30-40 minutes.
